Wild Harvest: Wild Game Cooking Class

Music City SCI, The Clean Plate Club, and the Jackalope Brewing Company proudly present an evening of porcine delights.

On November 14th, from 6 - 9pm at the The Ranch Taproom the chefs of the Clean Plate Club will demonstrate and prepare a tasting of five dishes. This dinner will focus on preparing wild boar and will feature a demonstration of how to breakdown a pig for cooking, the preparation of the dishes that we will be dining on and a presentation on the problem of invasive pigs in Tennessee. It will be an educational, entertaining and most importantly a delicious evening.

Archery Tune UP

Joella Bates, from the USA 3D Archery Team, has graciously offered to teach an Archery Tune Up class ahead of deer season!

On September 14th from 10am to 2pm we'll get together in White's Creek, TN to shoot some arrows, get a little expert coaching, cook hot dogs and tell a few lies about deer seasons past. We'll have games, competitions, prizes, food and drinks. All you need to do is bring your bow, some folding chairs and your family. 

This is an great opportunity to receive pointers from a world class archery coach. Joella has won eleven 3D Archery World Championships, she was the first bow hunter to take Africa's big five in a single safari, and she coaches, runs outreach programs, serves on the chapter's board of directors and much more.

August General Meeting

Please join us on August 5th at Royal Range from 6 - 8 pm for our August General Meeting. Our guest speaker will be Donald McKenzie, Director of the National Bobwhite Conservation Initiative (NBCI). NBCI is a regional initiative that includes 25 states and represents the most comprehensive interstate effort on behalf of a resident game bird in the history of wildlife management.

Music City SCI is proud to partner with NBCI as part of a long term effort to re-establish bobwhite quail populations in the South. This is our chapter’s main conservation project and will likely remain so for years to come. Come and learn more about this great program and how your donations to MCSCI are making a difference on the ground.

The auctions this year will feature some truly amazing hunts and fishing trips As our reputation grows, our outfitters are stepping up and offering better and better packages. If you can't be there for the banquet you can still bid on the live auction and select items in the silent auctions (hunts and guns). All you have to do is go here and sign up. July Meeting of Music City SCI

Please join us for the July meeting of Music City SCI. Our guest speaker will be founding chapter member Nort Harrison. Nort will be sharing his experiences on his recent moose hunt in Kamchatka, Russia.

Nort has hunted on four continents, seven countries and in North America has held resident hunting licenses in nine states. He also holds a resident Jagdschein hunting license from Germany. He has taken 25 major species from North America, Africa, Europe and Russia including three of Africa’s Big Five (Bull Elephant, Leopard and Cape Buffalo). He is a skilled photographer and is a published contributor to Safari Club International’s Safari Magazine.

Nort is a member of Safari Club International and The Music City SCI Chapter, an Endowment Member of the NRA and a certified hunter safety instructor with the Tennessee Wildlife Resources Agency.

Nort is a retired career Air Force officer and a current freelance business consultant. He is married to his fantastic wife Linda for 46 years and has two grown children.

May Meeting of Music City SCI

Please join us for the May meeting of Music City SCI. Our guest speaker will be chapter member Zach Knowles of Xtreme Outfitters. Zach will be sharing his experiences as an outfitter as well as telling us what to look for when choosing a guided hunt in North America.

Zach Knowles is a professional outfitter and guide, and has done contract camera work for an outdoor television show in some of the most extreme destinations in the world. He thrives in the harsh places and isn't afraid to take on any challenge in any terrain.

Zach’s family has been in the hunting and outfitting business since he was a small child, and he spent a lot of his young years in Saskatchewan where his father outfitted 70+ deer and bear hunts a year. At 12 years old Zach harvested an elk, mule deer, and antelope on a trip to Wyoming and it was then that his love of the mountains and western hunting was born. Since then he has gone on to guide and harvest many more animals from Alaska to Mexico, and even the Middle East.

He owns and operates Xtreme Outfitters, running 40+ whitetail, mule deer, elk, and sheep hunts a year. His specialty and true love is hunting sheep and giant mule deer. During the 2016-17 season, he was a part of harvesting 10 mule deer bucks over 180", and quite possibly the largest free range desert sheep to come out of the mainland of old Mexico this year. While he's got yearly leases in Kansas, Texas, and Mexico where he returns year after year, he operates different from a typical outfitter.

Zach's specialty is finding particular hunts/tags for his clients, and then accompanying them on the hunt. Sometimes he acts as the sole outfitter/guide, or when the assistance of a local outfitter is needed, he helps glass, pack, and represent the client on the hunt. This works very well for guys that know what they want to hunt but don't know where to start. Zach does the research, handles the logistics, and then goes along to make sure everything goes smoothly. He has multiple clients that have harvested several species on different continents with him.

When he’s not guiding or hunting for himself, you'll find him in the team roping arena or at the ranch taking care of his commercial cow herd.
